Riding high on endorphins is how I like to feel when I put together a salad.
Feeling this wave of delight encourages me to flood my system with carbs, protein, and antioxidants for the most effective recovery.
The orange and peach provide fast-acting carbs, hemp seeds provide protein, and the remaining ingredients provide a plethora of antioxidants.
The ghee, hemp seeds, and pistachios provide just enough fat to assist fat-soluble vitamins to absorb without inundating your system with too much fat post-workout.
Fresh basil makes this salad perfect for a summer cool-down but it can also be substituted for fresh mint! Make the cauliflower rice ahead of time for a quick assembly.

Post-Workout Pistachio Peach Cauliflower Salad
Post-Workout Pistachio Peach Cauliflower Salad
Yield: 1-2 servings
Ingredients
- 1 large cauliflower, florets chopped off (discard the stems)
- 1 T ghee
- 1 tsp garlic powder
- pinch of sea salt
- 1 orange, zested and juiced
- 4 peaches, sliced
- 10-12 large basil leaves, chiffonade (or torn)
- 1 T hemp seeds
- fresh ground black pepper
- dash of cinnamon (a little goes a long way)
- 1/4 cup chopped pistachios
Directions
- Make the cauliflower rice in the food processor by pulsing 10-12 times until you achieve small grain-like texture. Be careful not to pulse too much or it will loose it’s texture and become mushy.
- Place the cauliflower rice in a medium-high heat pan along with the ghee, garlic powder, and sea salt.
- Stir occasionally for 5 minutes and remove from heat. Allow to cool to room temperature.
- In a mixing bowl, place the cooled cauliflower rice, the orange juice and zest, sliced peaches, basil leaves, hemp seeds, black pepper, and cinnamon and toss until well-combined.
- Garnish with chopped pistachios.

This is a salad I might also add some chicken or fish to as well to boost the protein content - and I think it would be delicious.
