I really loved the vegan, paleo Pie Crust recipe I made a couple weeks ago, and wondered if I could adapt it to make a killer Pizza Crust. For me, there has not been a great alternative to regular pizza crust - I love the way cauliflower pizza crust tastes, but it's a pain to make, and some of the other recipes I've made - while tasty - haven't held up well after a day in the fridge. And, duh, everybody knows that pizza the next day is AWESOME. I think what you'll find with this recipe is … [Read more...]

When I like something, I like to make it many times with variations - so if you've already seen this recipe here is my latest variation, and I made a video for you too! I can't wait to finish my Healthy Entrees cookbook so I can share more recipes like this with you! Try this out, and feel free to modify or swap ingredients! (PS I called them healthy enchiladas before, and that's not correct - they are tostadas! But when it comes to cooking, like Julia Child says "you've got to have a what the hell attitude!" As long as … [Read more...]

Coconut Curry Chicken Fettuccine with Capello’s Gluten Free Pasta

When you're eating gluten-free or grain-free and being mindful of your intake of pre-made foods....dishes like fetuccinne, gnocchi, and lasagna get rotated out in place of lighter fare. The sugar spike from the processed flour in the pasta, combined with the irritating gluten protein in the wheat can leave you feeling lethargic and overly full after a meal. And let's remember too that grains, when not prepared by you or purchased already sprouted or fermented contain phytic acid, that … [Read more...]
